After going down a taco rabbit hole in lockdown, I decided to take the leap away from sandwiches and fire up a foodtruck. So here I am, an Irish man doing his best to make good tacos and trying my best not to offend any real deal Mexicano’s in the process. This is just my take on a food I love.
